  • Nose – Jaunty juniper leads, but is quickly followed confident and warming notes of cardamon, cumin and sweet citrus. The complexity of Bertha is evident and enthralling. She demands to be tasted. Palate – our whey alcohol base comes to the fore on the palate. Like a conductor of an orchestra, she holds and releases the different notes to maximum effect. Effortlessly smooth from the start, sweet orange, coriander and peppery Alexanders are joined in a warming motherly caress of cumin, clove and cardamon. The generous nature of the spirit washes over the palate, finishing in a gentle spice-tinted heat that delivers a considered murmur of approval from your taste buds.
  • Production

    We produce Bertha at Ballyvolane House in Cork in a converted cattle shed which is now a working distillery. One of the main distinctions about Bertha is that we use whey ethanol as our base spirit. We buy this in at 96% from a local cheese-making company who ferment and distill the whey on-site. We use our own spring water and add this to the whey alcohol in our 125 litre still. We then add our botanicals to the mix. We use 18 botanicals in total: juniper, coriander, bitter orange, sweet orange, grapefruit, lemon, lime, liquorice, orris, angelica, cinnamon, cardamon, cloves, cumin, almond, elderflower, and alexanders. We usually allow the ingredients to macerate for a period, before gently introducing heat and starting the distilling run. We favour a long, slow run to maximise smoothness and purity of spirit. After the hearts are collected, we cut them with our spring water to bring down to 44%ABV and allow to settle overnight. We then make the final cut to 42% ABV, after which we can bottle. All bottling is undertaken by hand, and each batch is recorded on the bottle. We usually produce somewhere in the region of 75 bottles per run, so it is genuinely small-batch!
