Winemaking
The Tempranillo and Cabernet Sauvignon grapes were sourced from the Finca Rableros estate. The grapes were destalked, crushed and fermented for 8 days at a temperature of 29C. Once the maceration and malolactic fermentation is finished the wine is aged in American and French oak barrels for 7 months. Somontano enjoys a unique microclimate. The climate verges on the Mediterranean (olives are grown in the area), but its proximity to the Pyrenees allows cool mountain breezes to descend to the area. The result is excellent temperature differences between day and night and therefore elegant wines.
