Pacherenc is a name in few wine lovers’ vocabularies. If you have encountered it, the wine was most likely the delicious sweet version, great with Gascogny’s foie de canard or croustades. But hunt the web and you’ll find merchants who do offer dry pacherenc. I haven’t tried this but I’d like to.
