It’s amazing what careful, cool, reductive wine-making has done to white wines. This delicious example has aromatic peach and apricot fruit of good palate weight. And it has a smooth, mouth-filling texture and a fresh finish.

The old-time experts used to pooh-pooh white wines from France's Mediterranean coast: they weren't very polite about the reds; they were positively libellous about the whites!. But there have been decent white grape varieties growing there for centuries, and modern winemaking methods mean we can now see the beauty of these neglected grapes. Rolle is one of the old varieties, especially when grown on the chalk soils at Coujan, and this wine sucks up the lavender and thyme from the surrounding hills and wraps them around delicious overripe Cox's apple and pear flesh fruit cut through with lemon zest and slashed by a seam of almost vindictive minerality
