Winemaking
The grapes are ripened on the slopes near the Neusiedler See, which promotes noble botrytis due to its distinctive microclimate. The nights are warm with a relatively high humidity. The mould grows on the skins of the berries and are hand selected when harvested
Blended of several slopes, all south east slopes, with loamy sand type soils. Harvesting took place between October and November. The fermentation took 40 days, although due to the style of the wine the settling process took a total of 5 months.
