Winemaking
The vines are grown on the Lire Trellis System, which is a modern vineyard system used to control vigour and is perfectly suited to the Chilean valley floor soils which are very rich, and the naturally beneficial Chilean climate. Harvested from late March, the grapes were left to cold soak for 1 day to extract colour and delicate aromas, before crushing and fermenting at a controlled temperature of below 30º C. The total skin contact time was around 15 days, just enough to extract vibrant fruit and gentle structure.
Food recommendation
Lamb chops with coarse-grain mustard and red-tomato chutney, grilled lamb kebabs with cumin and cinnamon, or a duck salad.
