Winemaking
The grapes were hand harvested during the first week of March at 22 brix. After de-stemming, the grapes were not passed through crusher in order to keep whole grapes during cold maceration and the beginning of the intracellular fermentation. The grapes were chilled to 10C and remained in stainless steel tanks for 24 hours under anaerobic conditions. After this maceration, the grapes were gently pressed and the must was clarified by gravity. Fermentation occurred at 13 to 18C for 12 days in stainless steel tanks. After dryness, the wine was racked into 2nd use French oak barrels and aged there for 4 months.
