14.5% alcohol. A touch of cigar box on the nose, which brims with ripe and vibrant fruit, sour cherries and blackberries. The palate is rich and ripe, full of interest and reasonably complex sweet fruit flavours, well balanced with ripe tannins and acidity. The long finish rounds off a good, full & generous wine. Very well made and juicy, this is fine now but will develop further intrigue with cellaring. More than a match for a four cheese pasta sauce, but would be equally good with a variety of meat dishes.

Winemaking
63% Cabernet Sauvignon, 37% Merlot. No yeast was added, the native ones adding to the individual character of the wine. The grapes were given a cold soak before fermentation to maximise colour and fruit but no extended post fermentation maceration. Aged 18 months in a mixture of new, second and third fill French Oak barrels, racked at intervals as necessary. Polished with a very light egg white fining and bottled in December 2007.
