Winemaking
Our 2ha Pinotage vineyard produces more wine than required for Synchronicity, so the rest is bottled for sale in England and Scotland exclusively. We place the emphasis on fruit and gentle extraction to avoid harsh tannins while retaining Pinotage characteristics. Cold maceration before ferment followed by a short hot fermentation period before pressing. Thereafter the wine is taken to barrel immediately where it finishes MLF. Bottled after about 14 months in 225L 2nd and 3rd fill French oak barrels.
