Winemaking
67% Cabernet Sauvignon, 19% Merlot, 14% Pinotage. No yeast is added and fermentation starts spontaneously in closed stainless steel tanks. Extraction by pumping over. No extended maceration. The components were aged separately in new French Oak barrels for 12 months before the best of these barrels were selected. From these the blend was then made, the wine returned to barrel and matured another 12 months. Racking and aeration to stabilise and clean the wine carried out at intervals as felt necessary. Fined with egg white. All the soils are deep well-drained loams of medium to high potential, classified as Hutton and Glenrosa. The sites benefit from their southern exposure within the centre of the Stellenbosch region. Average yield is 5 tons/ha. Vines between 10-14 years old. Synchronicity is our flagship, a blend of all red varieties in production at our Devon Valley vineyard.
