Naturally frozen Cabernet Franc grapes are hand harvested at -10°C. Pressed frozen, releasing only one drop of pure extract from each grape. Fermentation is performed at a cool temperature to retain fruit concentration (a short skin contact for colour and complexity), then 70% of the wine is aged in stainless steel.
Enjoy during a meal, with paté or with foie gras for a mouth sensation. A wonderful companion to spicy Asian cuisine. Try with black olive tapenade on crusty baguette. Enjoy after a meal, with fruit based desserts of cherries, raspberries and strawberries or dark chocolate. Also enjoy with soft, blue veined cheeses; blueberry tarts; plum cobbler; dark chocolate dipped strawberries.
