The Peller family have been making wine in Niagara for 3 generations, and are widely regarded as one of the highest quality and most innovative of Icewine producers. Peller Icewine is a rare gift from a magical Canadian winter. Picked at the coldest moment of a winter's night, each frozen grape creates just one drop of Icewine. One smooth rich, luxurious drop, at its best when it's served wintery cold and sipped before dessert, with dessert or even as a dessert. Icewine is a rare dessert wine produced from the juice of naturally frozen grapes that have been picked in the middle of a cold Canadian winter. Grapes for Peller's Icewines are always picked at temperatures of least -10°C, with the grapes frozen on the vine and hand-picked in the middle of the cold Canadian night. Once picked, the grapes are pressed immediately while still frozen. Each frozen grape yields just one drop of intensely frozen juice.

Food recommendation

Serve chilled in small white wine glasses, 1 to 2 oz per person. During a meal with pâté or with foie gras for a mouth sensation. Also a wonderful companion to Indian curry dishes and spicy Asian cuisine. Serve with the cheese course which may include cheddar or creamy blue cheeses. After a meal with fruit based desserts of mango, pear, quince, sweet citrus and tropical fruits; crème caramel; crème brûlée; custards; and syllabubs. Vidal Icewine complements fruits such as peach, banana, cantaloupe, apricot, pear, apple, pineapple, mango and papaya.
