Gilles Bouton excels in producing white Burgundy of elegance and a real sense of place, at particularly reasonable prices. Although the estate’s focus is in producing whites, the St Aubin ‘En Créot’, is a delicious, good value red for consuming in its youth. Gilles inherited less than four hectares from his grandfather in 1977, and has expanded to eight since then, renting and cultivating an additional six. The total area is divided into over 70 vineyard plots: an example of the extremely fragmented vineyard ownership that occurs in Burgundy.
