Winemaking

Las Brisas vineyard is planted in a southwest orientated slope in Leyda Estate. Because of this exposure, sunlight is slightly less in this block and the influence of ocean breezes is higher. Then, the ripening process occurs at a slower pace contributing to the development of different and special flavours and aromas. The production in this block is 5 tons per hectare. The winemaking of this block tries to be very respectful with the freshness of flavours from the grapes. Then, the extraction and maceration of skins is gentle and soft. After fermentation the wine is aged in French oak barrels for 8 months. New oak is not used in this wine in order to keep the fruitiness and brightness of aromas and flavours.

    The nose gives off fresh but reasonably rich cherry fruit tinged with only just ripened berries and suffused with mediterranean herbs. The fruit is definitely sweet in the mouth, but the lively herbiness and well-proportioned tannins (nothing too strident) balance this and it doesn't do a 'bubblegum' on you. There are some distinctly French 'dirty' carnal notes lurking there as well which make this a very interesting wine for £12. I would serve it with Saltimbocca (which we make with pork tenderloin rather than veal). It was good with unsalted gammon too - but it does have a lot of alcohol, some would say too much, I guess.
