Winemaking

This wine comes from two specially selected fields. The grapes are harvested by hand, rigorously sorted, and pressed in under two hours of harvesting. Fermented and aged in oak barrels (30% new) for 7 months. Batonnage twice weekly. This wine comes from a plateau high in the foothills of the Pyrenees, where the grapes were able to reach high maturity without losing their natural freshness. The harvest at Rives-Blanques is generally later than the harvest in the plains of Languedoc. The vineyard was in the first batch to be recognised by the French government for its environmentally responsible viticulture ('Agriculture Raisonne')

  1. What a beautiful wine Review by Matt

    The aroma hits you immediately - vanilla, orange, pear and orange marmalade all wrapped up in a yeasty biscuit note. In the mouth its long, long with all the elements singing together in a perfect harmony. Great with salmon and beurre blanc. It kept its character perfectly when over chilled and after sitting in a decanter for 4 hours, unlike alot of chardonnays. (Posted on 04/05/2009)
