Winemaking
Classic Reserve Sauvignon Blanc comes from selected blocks planted in Leyda Estate. Canopy management is carried out in order to protect the fruit from direct sunlight and therefore, keep the brightness of the aromas during the ripening period. Winemaking is orientated to preserve the varietal aromas and flavours and the sharpness and freshness of a cool climate Sauvignon Blanc. The grapes were hand harvested during the mornings of the third week of March then went to a sorting table, making sure that only ripe and rot free clusters went into the press. The must was fermented at low temperatures to preserve the intensity of aromas.
