  • Based on the East Devon border, a stone's throw from the Jurassic Coast, Lyme Bay has been making award-winning drinks for over 20 years. They began their English wine project in 2007, releasing their debut vintage in 2014. Since day one their ethos has always been 'quality first' and their efforts have been quickly recognised by a number of international awarding bodies.

    Seyval Blanc grapes are used to create a bright, fruit forward and elegant, yet approachable English sparkling wine. Secondary fermentation in bottle under the Traditional Method process provides structure to the mid-palate and detail to the body of the wine without overpowering the delicate crisp citrus fruit. Pronounced notes of lemon and Granny Smith apple stand out amongst a vibrant and delicate mousse with a clean finish.

Winemaking

The fruit was hand harvested from the 1st to the 5th October 2014 at the point of optimum flavour ripeness. The grapes were carefully de-stemmed and crushed, then gently pressed to protect the delicate flavours. After cold settling to remove any solids, the juice was fermented at cool temperatures (12-15°C) using specially selected yeast to maximise the varietal character. Following fermentation, the wine was gently racked, then left to age for four months on fine lees to improve structure and mouthfeel.

Oysters and crab, fish and chips, smoked salmon, spicy dishes, berries and citrus desserts or simply on its own as the perfect aperitif.
