  • Variety

    Bacchus
  • Shoreline combines many of the qualities that make Lyme Bay Winery so special; a crisp and refreshing wine made to match the fine seafood caught all along the Lyme Bay coastline. The combination of Bacchus, Pinot Noir, Reichensteiner and Seyval Blanc results in a wine with plenty of lemon and tropical citrus, supported by elegant floral notes of nettle, rose and lychee and fantastic structure. Grown, picked, pressed and fermented with the upmost care and attention to detail, the wines are then expertly blended to optimum proportions.

Press ReviewPress

Emerging (English) wines to look out for this year include a white blend from East Devon with a citrus and floral scent that’s great with seafood.

Susy AtkinsDelicious Magazine, April 2017

My final white is much closer to home – just down the road in Dorset; English sparkling wine now stands up to Champagne in international competitions, but still wines are less well-known. I recently discovered the appropriately-named Lyme Bay Shoreline – light and pretty with a citrus tang and floral notes. Perfect for a day by the sea, or a holiday BBQ, and a mean match with take away fish and chips, watching the sun set over the water.

Winemaking

The Shoreline is a blend of Bacchus, Pinot Noir, Reichensteiner and Seyval Blanc, with each of the parcels fermented separately with different yeast strains and temperatures to make several complex layers of flavours and aromas. Upon completion, the different vats were assessed for potential and characteristics, then blended together in the optimum proportions. The resulting ‘Shoreline’ blend was aged for four months on fine lees to improve structure and mouth-feel, before being bottled at the end of February to preserve its freshness.
