Côtes du Castillon / Saint Emilion
When the young Richard and Danielle Dubois took over the family vineyards in Saint Emilion in 1985, they were guided by a single objective – ‘maximum quality’. To achieve this a specific policy was put in place: rigorous yield control (their top wines are harvested at a meagre 10-12 hectolitres per hectare), accurate quality control in the vineyard, picking and vinification plot by plot, grape variety by grape variety, and a return to maturing in the very best French oak barrels.
In 1991 Richard and Danielle acquired 9ha of Côtes de Castillon and by following the same demanding principles, the results have also been fantastic.
