Chablis

Shape-shifting Chardonnay is at its most playful in Chablis where this versatile grape produces wines that range from crisp, steely and restrained to rich and round and full. Although perhaps best known for its un-oaked expressions, most Chablis, and in particular the Grand and Premier Crus, is, in fact, oaked. But for those of you with a fear of the barrel, don’t be put off, the oak takes a back seat and adds texture and structure without competing with the fruit.

Whatever style of Chablis tickles your fancy, there is one characteristic that unites them all - a distinct mineral backbone provided by the Kimmeridgian, a prehistoric limestone of fossilised marine creatures running through Chablis and on to Sancerre and Dorset!
