Tasting Note

The aromas of this wine are as tempting as they are intoxicating. The depth of black forest fruit is framed by the smooth chocolate and vanilla of judicious oak. Directors’ Cut Shiraz is enhanced by the hints of spice so closely associated with the Langhorne Creek region. The lingering finish foreshadows a wine with many years of potential cellaring ahead…if you can be that patient. If not, enjoy!

Winemaking

Variety: Shiraz 100%. Region: Langhorne Creek 68%, Limestone Coast 32%.
Soil: Langhorne Creek: Sandy Loam. Limestone Coast: Grey marl over deep limestone. The fruit for Directors' Cut required special attention to avoid overstress during the final stages of ripening. Adequate canopy cover was essential to minimise the effect of the heat and ensure fruit quality. The fruit for Directors' Cut Shiraz was harvested at night and then crushed into open top stainless steel fermenters. After 24 hours of skin contact the wine was inoculated with a Rhone isolate yeast. Following 7-8 days fermentation on skins and hand-plunging 3 times daily, the wine was transferred to oak (80% French, 20% American) for malolactic fermentation. The wine was then topped and left on lees for 6 months with "battonage" (lees stirring) once a week. The barrels were racked and refilled before a further 8 months maturation prior to bottling.
Maturation vessel: 100% oak. Age of vines: 25-30 years (Langhorne Creek) 16-18 years (Limestone Coast). Vineyard yields: 3.6 tonnes/ha (1.5 tons/acre). Cellaring potential: 6-10 years.

Food Recommendation

A barbecued rib-eye with a fiery smoky Texan ranch marinade is a fine choice.

  • Deeply delicious

Fantastic wine, lots of depth and layers of flavour! A big wine but a complex one.

  • Almost one dimensional

A Platinum medal is a surprise. I could not detect the flavour layers that Oz Clarke and Decanter describe. I got vanilla and dark ripe fruit bouquet and it certainly is soft and smooth with some subtlety, but whilst it is pleasingly round, for me, there are much more interesting wines to be had for the same price and less with GWW.
