Tasting Note

Magnificent greenish gold in colour with a crystalline brightness and a strong, intense effervescence with fine and regular bubbles. Highly aromatic and packed with notes of white flowers, honey, lemon, fresh plum and pineapple. The palate confirms the complexity and richness of the bouquet with an initial lively freshness leading into a rounded palate that displays notes of honey, vanilla and short bread right through the long, long finish. Truly inspiring.

The vineyards chosen for Fleur de Champagne have an average échelle des crus rating of more than 99 percent, making this one of the most highly-rated prestige cuvées. Chardonnay for this cuvée comes from 100-percent-rated villages of Cramant and Avize within the district of Côte de Blancs. On the slopes of this famous Chardonnay district are Perrier Jouët's 100-percent-rated estate Cramant vineyard that provide the structure, elegance, lightness and floral finesse for which Perrier Jouët Champagnes are known. A predominance of the grand cru Chardonnay used for the final Fleur de Champagne blend is from the Cramant village and although more expensive to use than other grand cru Chardonnay grapes, Perrier Jouët is able to provide up to 40 percent of the final Fleur de Champagne blend due because of their vast ownership within this esteemed village. In addition, grapes from an estate parcel within Cramant called Bouron-Leroy – the single vineyard source for the grand cru Fleur de Champagne Blancs de Blancs – contributes to this blend. The Pinot Noir comes from 100 percent rated villages of Aÿ, Dizy, Mailly and Verzenay, the with première cru Pinot Meunier grapes from Dizy. To emphasize fruit and balance, the grapes are gently crushed and fermented with proprietary yeasts in temperature-controlled, stainless steel tanks. After racking, Chef de Caves Hervé Deschamps tastes more than 300 individual wines from these six villages, selecting fewer than one-third for the final blend. Once the blending is finished, the wine is aged for five years on the lees in Perrier Jouët’s historic cellars tunneled directly into the region’s famous chalky soil. The caves, which run 50 feet deep and remain at a constant temperature of 52 degrees, are filled with millions of bottles spanning vintages from the 1800s.

Food Recommendation

Beyond the toasts and ship launchings, Champagne has a place at every dinner table. Belle Epoque Champagne pairs well with gouda and almonds; St. Jacques tartare; smoked salmon, lemon-herb blinis, crème frâiche and caviar and saffron risotta with prawns and sweet pepper romesco; scallops ceviche with lemon.
