Winemaker
Organic Viticulture has been used to enhance the aromatics of this truly expressive Pecorino. The grapes have been carefully early harvested in order to avoid the high alcohol production (which is typical for pecorino grapes).
Winemaking
Destemmed and pressed, the grapes go to the stainless steel tanks where the fermentation begins. After the fermentation the wine ages from 4 to 6 months before the bottling.
Food Recommendation
Match the delicacy of this wine with light seafood, especially shellfish dishes, and even lighten up cheesy pecorino-topped pastas and pizzas.
