Tasting Note

An absolutely phenomenal wine, this has amazingly intense and complex aromas of black cherry, purple plum, liquorice, fennel, lavender, honeysuckle and woodsmoke aromas.  In the mouth, it is no less concentrated or complex, with morello, damson, cherry leaf, eucalyptus, roasted meat and cedary oak character coming through; balanced by fine freshness and underpinned by super-silky tannin.  Complex as it is right now, it exhibits a sense of restraint, as though it has even more to offer if you can hang on to it for a bit.  A couple of years should be sufficient, although I anticipate that it is capable of keeping for at least twenty, if desired.

Winemaking

The grapes are handpicked in the cool of the morning. Prior to fermentation the fruit is cold soaked for 3 days & then inoculated with yeast. Fermentation takes place in open top stainless-steel tanks with up to 30% whole clusters included. The wine remains on its skins for 2 weeks during which time hand plunging takes place to encourage great flavour, colour & tannin extraction. Post-fermentation the wine is gently pressed & then racked to barrel for maturation on fine lees for 10 months. Around 35% of the oak is new French barrels with the remainder being 1-4-year-old puncheons and hogsheads. The wine is then carefully blended & lightly fined prior to bottling.

Perfect with a big beefy stew such as ox cheek especially with a touch of smoky spice or chilli.

  • 97/100 - Hand-picked, 5 days cold soak, open-fermented, up to 50% whole bunches, 14 days on skins, matured for 9 months in French puncheons (35% new). Fragrance and elegance personified. Juicy cherry fruit opens proceedings, then mouthwatering acidity and fine-grained tannins draw out the lingering finish. Amen.
