Tasting Note

This cava has a bright gold colour with green tinges and threads of fine bubbles. On the nose, it is fresh and inviting mainly reminiscent of bramley apples with a touch of biscuit. The taste combines citrusy flavours and hazelnut finishing with an almost creamy texture. We believe that these are the hallmark of a wine made with great attention both in the vineyard and the winery.

Winemaking

Vinification - Secondary fermentation in bottle. Time of fermentation: 30 days. Temperature: 16ºC. Ageing - on the lees: At least 12 months.

  • Like London Cru, former UK-based French sommelier Franck Massard also takes his fruit from a variety of sources – in his case several Spanish regions – applying his signature style without obscuring the origins of the grapes. He is perhaps best known for his work in the Catalan region of Priorat, where he bought his first plot of vines. But, like many people (it won a trophy at this year’s Wines from Spain Awards) I was particularly impressed by his take on Cava. This is a style that does a perfectly serviceable job of fulfilling the need for cheap fizz. But it can do more than that: Massard’s version avoids the mistake of slavishly imitating Champagne, using classic local grape varieties for a distinctive, dry, graceful apple-scented delight.

  • Cava is made the same way as Champagne, often using native grapes, but costs a fraction of the price. This has pretty floral aromas with yeasty citrus fruit. The palate shows complexity and fine acidity with ripe apple and biscuit notes on the finish. Great value. 92/100.

Try these alternative sparkling wines under £15 instead..." - Spain produces traditional method cava, mainly from the Penedès in Catalonia but there are a further eight regions producing smaller amounts, such as Navarra, Rioja and Aragon. Made from Parellada, Macabeo and Xarel•lo – although other grapes including Chardonnay, Pinot Noir, Monastrell and Garnacha are also permitted - the wines have dependable quality and appeal. Drier than Prosecco, they are closer to a NV Champagne in flavour. Ignore the big houses and seek out smaller vineyards making unique versions, such as the award-winning Mas Sardana Cava Brut Nature made by Frenchman Franck Massard, using fruit from different Spanish regions. The style is nothing less than elegant, with floral and clean citrus aromas. Each sip is light and dry, restrained at first, while also maintaining a real depth of flavour. A slightly creamy, nutty and almost bitter finish keeps you coming back for more.

  • My favourite Cava!

    When I moved to the UK I was surprised to see how popular Prosecco was and, by contrast, how few people had tried cava. I certainly would not bother with the cheaper ones; if you are going to drink cava, buy a "Brut Nature". It basically means that no sugar has been added to the fermentation process. The result is a crisp, light and slightly bubbly cava - most enjoyable! Ideal for celebrations but also to accompany a meal.
