After hand harvesting the grapes into small plastic buckets the bunches are transferred to the winery for pressing. The resulting liquid is fermented at warm temperatures (around 25 degrees) for around 12 days to give a fairly neutral, dry base wine at around 11% alcohol. This base wine is then classified and only a small part of the harvest is deemed to be of exceptional quality to enter into this special solera. This base wine is fortified up to 20% and then spends 15 years ageing oxidatively passing through the solera and criadera system.
