“Chablis is not Meursault” - Jean-Loup Michel
The Michel family has been making wines in Chablis since the 19th century, and the 25-hectare estate is today managed by Guillaume Michel. The family's vineyards are all in the heart of the original Chablis region: none of them is more than two kilometres from the winery, which makes it easy to ensure that the fruit is in pristine condition when pressed.
The Domaine’s philosophy is that in Chablis, wines should be “made in the vineyard” - so since the 1960s, the Michels have used nothing other than stainless steel to ferment and mature their wines. In the words of the family, “what better way to showcase nature than to let it express itself without any artifice?” This approach brings about wines that are at first reserved and correct, opening up as you get acquainted to reveal lots of individuality and complexity.
