Tasting Note
Pale yellow colour brilliant, with some green reflections. Intense aromas citrus of lemon are revealed at first nose and then fresh notes of boxwood and mint mingle with the mango. The mouth is elegant with a nice balance between a suave start and a fresh finish. Beautiful length of lemony aromas.

Ideal as an aperitif. Oysters, perch fillet with dill.
Winemaker
Clay-limestone to deep loamy soils, vineyards selected as suitable for Sauvignon Blanc in 2 regions: the South West and the Languedoc. Average age of the vines are 10 - 20 years with yield: 50 - 60hL / ha.
Winemaking
Grapes allowed to macerate on skins for 8-12 hours and cold stored at 8/10 ° C for a few days then Pneumatically pressed. Fermentation occurs between 16-18 ° C with selected yeasts tailored for all the typicality of Sauvignon Blanc. The wine is then aged on lees for several months before assembly, resulting in a textured and interesting wine.
