Tasting Note

The nose exhibits classic Cabernet aromatics of black currant leaf, violets and cigar box with an interesting twist of cooking spice and mustard seed. These lovely savoury notes are followed through onto the palate but with an underlying sweet blackcurrant and mulberry fruitiness that builds as the wine evolves in your glass. The initially cedary tannins, start early and give the wine incredible length. An intriguing fennel note accompanies the chalky tannins that are picked up on the finish, which is long and lingering.

Winemaking

Walking the vineyards and tasting grapes, Chester Osborn classifies and determines the ideal picking time for each individual vineyard. Small batches are crushed in the Demoisy open-mouthed, rubber toothed crusher and then trans-ferred to five-tonne headed-down open fermenters. These batches remain separate until final blending.
Foot treading is undertaken on most parcels two thirds of the way through fermentation. When tannin extraction is just right the wine is basket pressed and transferred to a mixture of new and used French and old American oak barriques to complete primary and secondary fermentation. The barrel ferments are aged on lees to keep the wine fresh while also reducing the oak influence. There is no racking until final blending. Chester undertakes an extensive barrel tasting process to determine the final blend.

Press

  • While for Sue Jones of The Harrow at Little Bedwyn this was ‘austere, mineral, with dark black fruits, though a little closed’, team leader Laura Rhys MS found it ‘rich and bold with opulent fruit, good complexity and acidity with well-managed oak’.
